Dear friend, it has been a while. I hope you are well. Life’s been quite the whirlwind since the new year. I left the casino in December due to burn out. I made the decision to leave while standing at the airport on Thanksgiving Eve to fly to Vegas to work Thanksgiving Day. I put my notice in on Thanksgiving day, and left mid December so I could spend the holidays with my loved ones. I’m a firm believer that once the energy you exchange for monetary compensation starts eating your soul and health away, it’s time for a change. The universe will never allow you to find peace in a place you don’t belong. While my year and a half serving as a chef, leading a very large team was rewarding and educational, it just wasn’t where I was intended to be. Nonetheless, I’m grateful for all the good friends I made during my time there, and the wild times we shared.
I am happy to announce that today I am a private chef working with a friends culinary group here in Las Vegas. It took a leap of faith going rogue as a 1099 independent contractor chef, but it has been the most rewarding leap I have ever taken professionally. My clients are the kindest people, who give me full creative control over what I serve them. I believe the best chef in the world is the one having the most fun, and right now that could possibly be me.
